Recipe from Tropical Traditions website

Preparation Time: 5 minutes

Servings: 30 pieces about 1/2 inch thick

16 oz Coconut Cream Concentrate (or coconut butter, or coconut manna)
1/4 to 1/3 cup raw honey (or to taste) (Use Natures Hollow Xylitol Honey Substitute- Netrition.com)
1 teaspoon vanilla extract
2/3 cup raw or toasted nuts (chopped)

Slightly warm the coconut cream concentrate over a bowl or pan of hot water until it can be stirred.

Stir in the honey, vanilla and chopped nuts into the coconut cream concentrate until well mixed.

Before it hardens, shape mixture into rolls and wrap in waxed paper. Let harden in the refrigerator and slice into rounds to eat as candy once firm. Store in refrigerator or at room temperature if below 75 degrees.

I haven't made these yet, but I have some Xylitol Honey Substitute coming in the mail, so I'll letcha know.]]>

I made these and they were really yummy. I liked cooking them in a skillet better than baking them in an oven though. They seemed more soft and flexible. No oil needed if cooking in a skillet.

WRAPS:
1/2 cup coconut flour (Coconut Secret Brand works)
2 TBSP psyllium husk powder
1/4 tsp Celtic sea salt
1/4 cup butter OR coconut oil, softened
1 cup boiling veggie broth OR water (broth adds flavor)
OPTIONAL FLAVOR ADDITIONS:
1/4 tsp garlic powder
1/2 tsp oregano (click HERE for the health benefits!)

Preheat the oven to 350 degrees F. In a medium sized bowl, stir together the coconut flour, psyllium husks, salt and any spices you desire. Add the butter or coconut oil. Stir continuously as you add the hot broth or water, it will melt the butter or oil. Combine until very smooth. NOTE: Once you add the boiling water the dough will begin to cook so move quickly!

Place the dough onto a piece of greased parchment paper. Using a rolling pin, roll the dough out in a circle shape with even thickness throughout. Place the bottom parchment with the unbaked wraps onto a cookie sheet (I make sure it isn't stuck to the parchment otherwise it is hard to release after baking). Bake at 350ยบ for 20 minutes or until done throughout (this will depend on how thick you rolled the dough). Use for sandwiches! Yum! Makes 6 wraps.

NUTRITIONAL COMPARISON (per wrap)
Traditional Wrap = 180 calories, 5g fat, 2g protein, 30 carbs, 3g fiber
"Healthified" Wrap = 123 calories, 8.7g fat, 2g protein, 9.3 carbs, 6.7g fiber!

Evidently, all coconut flours are not created equal. Maria uses a brand called Coconut Secret in all her recipes. I used a brand called Lets Do Organic. So if something doesn't turn out right, it could be the kind of coconut flour you used. In the past, I'd used very grainy coconut flours and everything was dry and gritty. But these flours are very soft and fine.

She also says these are great to make in a tortilla maker.

Coconut Nut Crunchies

2 cups pecans & almonds
1 cup (or more) Coconut Cream Concentrate (or coconut butter, or coconut manna)
1 tablespoon (or as needed) coconut oil
1/8 tsp. NuNaturals White Stevia Extract Powder (or to taste) Or whatever sweetener you choose
1/4 teaspoon Himalayan salt
1/2 cup (or more) shredded coconut or coconut flakes

If using xylitol or erythritol, process in food processor till very fine.

Spread nuts in a cookie sheet and toast very lightly in a low heated oven. Place Coconut butter jar in hot water to soften. In a medium sized bowl, beat desired amount of Coconut butter, your choice of sweetener (see below), coconut oil, and salt with a mixer until creamy. Make sure the sugar and salt are mixed in well.

Fold the toasted nuts into the mixture and mix well with a large spoon until all nuts are well coated. Spread mixture evenly on a cookie sheet covered with parchment paper.

Sprinkle the coconut shreds or flakes (toasted lightly, if desired) over the Nut Crunchies and place cookie sheet in the refrigerator.

When cold, break apart the Nut Crunchies into bite-sized pieces and store in covered containers in the refrigerator.

Note: all measurements are approximate and can be varied to suit your taste. It is pretty hard to mess these up.

Variations:

Use any nuts you prefer, and/or use stevia instead of sugar to taste.
Stir dried coconut toasted into the mixture before spreading out.
Add flavoring such as a tablespoon or two of lemon juice and some lemon zest for Lemon Nut Crunchies.
Melt some organic dark chocolate, and spread over the mixture before or instead of sprinkling on the coconut and refrigerating.
Stir bits of dried pineapple into the mixture for Pina Colada Nut Crunchies

Use your imagination!
